Oil Management


In the food service industry almost 70% of everything that is cooked is deep fried and cooking oil can be one of the most expensive food costs in your kitchen. That is why oil management is so important to ensure that you are getting the most life out of your oil to keep your costs down and provide your customers with the quality food that you strive for.


For the best results, you must monitor the deep fryer carefully. Often the oil temperature is different to the temperature indicated on the fryer. It is strongly advised to have a separate thermometer to get an accurate temperature reading. It is recommended to have your deep fryer set between 170 ⁰- 180 ⁰. If the temperature is below 170 ⁰ you can have oil absorption in your product and if it goes above 180⁰ you will start to burn your oil out.

Temperature, crumb, and batter products, as well as alkaline from detergents will break down your oil. That is why it is important to filter after service to remove the excess flour and crumb to avoid deterioration of your oil. The average deep fryer will cook between 200-300 kg of product, and this will vary depending on if you are using frozen product or fresh.

A tool that is a great asset to any kitchen is a Testo unit, this reads not only the temperature but also particles in your deep-frying oil. This helps lower oil costs and maximises the life of your oil and advises when your oil is ready to be changed.
